Verema primerenca i sense pluges. Molt bona sanitat durant tota la verema amb una producci\u00f3 m\u00e9s curta que en anys anteriors. El descens de producci\u00f3 ens va permetre tindre ra\u00efm molt sa i amb molt bon equilibri en alcohol i en acidesa, aix\u00f2, m\u00e9s les pluges de primavera van permetre a les plantes aguantar la calor sense perdre acidesa i mantenint bons PHS. No va ser f\u00e0cil obtindre una maduresa fen\u00f2lica \u00f2ptima en totes les parcel\u00b7les a causa de les altes temperatures de finals de juliol i primers d&#8217;agost, utilitzem m\u00e9s ra\u00efm sencer i macerem molt suau. Els vins antics s\u00f3n el resultat d&#8217;un viatge al passat, a les varietats antigues com mand\u00f3, arcos o verdil i als antics m\u00e8todes d&#8217;elaboraci\u00f3 com la crian\u00e7a en gerres de fang. En 2006 adquirim la nova finca en les alcusses i poc despr\u00e9s posem en marxa el nostre projecte d&#8217;estudi i recuperaci\u00f3 de l&#8217;\u00fas de les velles gerres de fang del celler i \u00e9s ah\u00ed quan naix cullerot. El cullerot \u00e9s la cria de la granota i cullerot \u00e9s un xicotet vi blanc que volia cr\u00e9ixer i millorar en una zona de vins negres. I aix\u00ed va ser. Les gerres de fang prompte ens van mostrar les seues bondats amb els vins blancs. Puresa i frescor, molta frescor. Just el que necessit\u00e0vem. Hem anat recorrent la comarca a la recerca de vinyes velles i amb el ra\u00efm blanc hem tingut molta m\u00e9s sort que amb les vinyes de vi negre (el poc que s&#8217;ha salvat de les campanyes d&#8217;arrancament est\u00e0 molt comprom\u00e8s amb les cooperatives). Ara mateix tenim acords amb 7 productors que suposen 15 hect\u00e0rees de 5 diferents varietats aut\u00f2ctones. A vegades acordem un preu per quilo per\u00f2 preferim arrendar o pagar per hect\u00e0rea perqu\u00e8 el viticultor no es preocupe per la producci\u00f3 i per a controlar millor el cultiu. Despr\u00e9s d&#8217;aquests anys estem feli\u00e7os per la qualitat i per l&#8217;\u00e8xit en el mercat d&#8217;aquest vi i tamb\u00e9 perqu\u00e8, pagant b\u00e9 als viticultors, hem aconseguit
